Fresh Mozzarella, Ricotta, Prosciutto & Arugula Grilled Cheese

2 tablespoons extra virgin olive oil
1/2 cup whole milk ricotta cheese
8 ounces fresh mozzarella cheese, sliced
4 ounces sliced prosciutto
2 tablespoons fig jam
1/2 cup arugula
1.Preheat oven to 375°. Heat grill pan over medium-high heat. Brush both sides of bread slices with oil; grill both sides 3 minutes or until light grill marks appear, turning once.
2.Place bread slices on cookie sheet; evenly spread 2 slices with ricotta and evenly layer remaining 2 slices with mozzarella and prosciutto. Bake 6 minutes or until heated through; over prosciutto, layer each with 1 tablespoon jam and 1/4 cup arugula. Close sandwiches; cut sandwiches in half to serve.
