Mexican Meatball Skillet

Bake: 25 minutes • Serves: 8

2 containers (14 ounces each) Old Home Mild or Hot Salsa
1 tablespoon 25% less sodium taco seasoning
1 bag (22 ounces) SIMEK’S Original Frozen Meatballs
1/2 ripe avocado, peeled and pitted
2 teaspoons fresh lime juice
1 cup Old Home Sour Cream
1 cup shredded Cheddar cheese
1/2 cup crumbled queso fresco
Chopped green onions for garnish (optional)

1.Preheat oven to 350°. In large cast iron or oven-safe skillet, heat salsa to a simmer over medium heat; stir in taco seasoning. Add meatballs to skillet, spooning salsa over meatballs to cover. Bake 25 minutes or until hot.

2.In small bowl, mash avocado and lime juice until smooth; stir in sour cream.

3.Sprinkle meatballs with cheeses and broil 3 minutes or until browned. Serve topped with sour cream mixture sprinkled with green onions, if desired.

Chef Tip:
Salsa and meatball mixture can be divided into smaller cast iron skillets, then baked as directed in step 1.
